1MB Travels: Chicago: Next: Trio And Bucket List Dining

I'm on my last few chapters of Life, On the Line - and Chef Achatz has been a huge source of inspiration.

From a childhood working at his parents' diner, to working in many of the kitchens of top restaurants in the world from The French Laundry to El Bulli; breaking out on his own against all conventional wisdom - to have the courage / audacity to create game-changing restaurants and dishes that garnered him coveted James Beard recognition, and top spots on best restaurant lists of prestigious magazines by the time he was just 30 years old.  To persist against the odds with the worst type of cancer a chef could ever be stricken with, and to hold tenaciously still to his dream, and refuse to compromise his highest ambitions.

Most foodies who have bucket lists, have Achatz restaurants at or near the top.  It was with incredible luck that for our upcoming trip to Chicago, the theme of Next (which transforms its entire menu and decor every 3 months) was announced to be Trio.  Trio is the name of the restaurant in Evanston, where it all began for Chef Achatz, his first gig as head chef after training under Thomas Keller - where he invented a dish called Truffle Explosion that put him on the culinary map.

I love the notion of this theme, taking it back to the beginning.  And, I'm a huge truffle fan so hoping that we'll get the rare chance to taste the original signature dish as well.

As luck would have it, Gourmetpigs was able to score tickets on the day they went on sale: for our upcoming trip to Chicago end of this month!!!!!

Yes, it is way pricier than any meal I've ever paid for on my own, but we expect it to be an unforgettable experience - unlike any other meal we've ever had.

The catch: Next only offers tables with even numbers of people (2, 4, 6), and we have to of course pay in advance, just like a concert or theater ticket.  And no, we didn't have a fourth person lined up when we bought the tickets - but we were not going to let that stop us.  Right now, we have...ahem, a trio...of committed foodies: Gourmetpigs, Conbon and myself.

  • When: 5:30pm on Saturday, September 27, 2014
  • Party Size: 4 guests
  • Price: Face value of what we've paid for our tickets: $255 per person + 10.5% tax + 20% gratuity = $338.13
  • Beverage Pairings: 1 x Standard Pairing, 3 x Water Service (if you would like the alcohol pairing, that can be added when we arrive at the restaurant)
